This chocolate Greek bark is an easy frozen snack made with nonfat Greek yogurt, chocolate , sugar-free chocolate syrup, and a few simple toppings.

I used strawberries, walnuts, shredded coconut, and chocolate chips on mine. You get chocolate in the yogurt base and a little more from the chips, while the fruit, coconut, and walnuts keep every piece from being exactly the same.

The recipe makes four servings with approximately 105 calories and 12 grams of protein per serving. It is a simple way to turn Greek yogurt and into something you can keep in the freezer when you want a cold, dessert.

You also don't need a full-size sheet pan. I spread mine on a small eighth-sheet pan in a layer about ½ inch thick, then froze it for approximately 1½ hours.

Ingredients

Nonfat Greek yogurt

Plain nonfat Greek yogurt creates the base of the bark and contributes protein without adding much fat. Different brands have slightly different nutrition, so check your container if you track everything closely.

Chocolate protein powder

I used one scoop of Legion Whey+ Dutch Chocolate. One scoop adds chocolate flavor and 22 grams of protein to the full recipe.

Another chocolate protein powder may work, but it can change the sweetness, consistency, and nutrition.

Sugar-free chocolate syrup

Use the pourable chocolate syrup sold as an topping. It adds more chocolate flavor and helps loosen the yogurt and protein powder mixture slightly.

Toppings

I topped mine with four chopped strawberries and 1 tablespoon each of chopped walnuts, chocolate chips, and shredded coconut.

Those amounts keep the toppings under control while still putting a little fruit, chocolate, coconut, and crunch throughout the bark.

How to Make Chocolate Greek

1. Prepare the tray

Line a small eighth-sheet pan or another freezer-safe surface with parchment paper. The parchment makes it much easier to lift the frozen bark from the pan.

2. Mix the chocolate yogurt base

Add 1 cup of nonfat Greek yogurt, 1 scoop of chocolate protein powder, and about 2 tablespoons of sugar-free chocolate syrup to a bowl.

Stir until the protein powder is completely mixed into the yogurt and the color looks even.

3. Spread it out

Transfer the mixture to the lined pan and spread it into an even layer approximately ½ inch thick.

The exact pan dimensions matter less than the thickness. If you use a larger pan, simply avoid spreading the yogurt across the entire surface.

4. Add the toppings

Scatter the chopped strawberries, walnuts, chocolate chips, and shredded coconut over the yogurt.

Spread them across the entire surface so the finished servings contain a mixture of toppings.

5. Freeze

Place the pan on a level surface in the freezer for about 1½ hours, or until the bark is firm enough to cut.

6. Slice and serve

Lift the bark from the pan with the parchment paper. Cut or break it into four servings.

If it has been frozen longer and is too hard to cut easily, let it sit at room temperature for a few minutes first.

Tips for the Best Yogurt Bark

Keep the layer about ½ inch thick

Spreading the mixture too thin will give you brittle pieces. A much thicker layer will need more time to freeze.

Mix the protein powder completely

Break up any dry pockets before spreading the yogurt on the pan. Scrape around the bottom and sides of the bowl as you mix.

Keep the pan level

Set the tray on a flat freezer shelf so the mixture does not collect at one end.

Chop the strawberries

Smaller pieces are easier to distribute and make the finished bark easier to cut.

Let deeply frozen bark soften briefly

The bark will become harder when stored longer than the initial 1½-hour freeze. Give it a few minutes at room temperature before slicing or eating.

You can change the toppings while keeping the chocolate yogurt base the same. A few options include:
