Notes

2-Ingredient Cookies Tips & Expert Strategy

TEXTURE/MOUTHFEEL: Expect a dense, fudge-like chew. These are more like baked almond paste than a traditional fluffy cookie.
INGREDIENT SUBSTITUTION WARNING: Do not swap for a granulated sweetener; without the liquid binder of the honey, the almond flour will not hold together.
THE BETTER LATER RULE: These cookies firm up significantly as they cool. Resisting the urge to eat them warm results in a much better 'snap' on the edges.
PROFESSIONAL FINISHING TOUCH: Use a well-oiled glass to press these. If the glass sticks, it will tear the dough, ruining the smooth professional finish.
