Ingredients

Cobbler Filling
  • 1 cup blueberries fresh or frozen
  • 1 tsp cornstarch
  • 1 tbsp sugar-free maple syrup
Crumble Topping
  • 0.5 cup Cinnamon Toast Crunch crushed
  • 1 scoop protein powder whey/casein blend
  • 1 tbsp sugar-free maple syrup added slowly to bind

Method

  1. Add the blueberries, cornstarch, and sugar-free maple syrup into a microwave-safe bowl and stir until coated.
  2. Microwave on high for 1 minute until the berries begin to soften and release their juice.
  3. In a small dish, mix the crushed cereal, protein powder, and sugar-free maple syrup until a thick paste forms.
  4. Spread the crumble topping evenly over the warm, bubbling blueberry filling.
  5. Microwave for an additional 1 minute until the topping sets and the filling bubbles around the edges.
  6. Let cool for 1 to 2 minutes before serving so the jammy base can finish thickening.

Notes

2 Minute Microwave Blueberry Cobbler Tips & Expert Strategy

TEXTURE NOTE: This filling should turn out thick, glossy, and jammy under a dense, clumpy cinnamon topping rather than being airy or cakey like a muffin.
SUBSTITUTION WARNING: If you substitute a pure whey powder instead of a whey/casein blend, the crumble topping will dry out significantly and become rubbery when microwaved.
BETTER LATER NOTE: While this dessert is best enjoyed hot right out of the microwave, any leftovers can rest in the fridge for up to a day, though the cereal topping will lose its initial crunch.
SERVING TIP: Serve this warm with a spoonful of cold fat-free Greek yogurt on top to contrast the temperature and add an extra hit of protein.
