Ingredients
Muffin Batter
- 1 5/8 cups all-purpose flour 195g
- 7/8 cup protein powder 98g
- 1 1/2 cups cup-for-cup zero-calorie sugar alternative
- 2/3 cup plain nonfat Greek yogurt
- 1 cup skim milk
- 1 egg
- 1 1/2 teaspoons vanilla extract
- 1 teaspoon baking soda
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
- 2 cups peeled diced apples divided: 1 1/2 cups for batter and 1/2 cup for topping
Cinnamon Topping
- 1/2 cup cup-for-cup zero-calorie sugar alternative
- 1/3 cup all-purpose flour
- 1/4 cup unsalted butter melted
- 1 teaspoon cinnamon
Cinnamon Glaze
- powdered sugar amount not measured
- milk as needed
- cinnamon to taste
Method
- Preheat the oven to 350°F and line a 12-cup muffin tin with liners.
- Set aside 1/2 cup of the diced apples for topping the muffins.
- Mix the cinnamon topping ingredients together in a small bowl and set aside.
- In a large bowl, whisk together the sugar alternative, Greek yogurt, egg, and vanilla until combined.
- In a separate bowl, combine the flour, protein powder, baking soda, baking powder, and salt.
- Stir the dry mixture into the yogurt mixture alternately with the skim milk, mixing only until combined.
- Fold in 1 1/2 cups of diced apples.
- Divide the batter evenly among the 12 muffin cups. Add the reserved diced apples and cinnamon topping over the muffins.
- Bake at 350°F for 25-30 minutes, starting to check at 25 minutes. The centers should be set and a toothpick should come out without wet batter.
- Let the muffins cool completely before glazing.
- Mix powdered sugar, milk, and cinnamon until a drizzleable glaze forms. Drizzle over the cooled muffins in a zigzag pattern.

Notes
- Protein powder: Different powders absorb liquid differently. Changing the type or brand can change the batter and finished texture.
- Mixing: Stop once the dry ingredients disappear. Overmixing can make the muffins dense.
- Apples: Dice them small and reserve 1/2 cup for the tops.
- Cooling and glaze: Cool completely before adding the optional cinnamon glaze. Its amounts were not measured; add milk a little at a time until it can be drizzled.
