Base Matrix
- 1 tablespoon unflavored gelatin powder
- 1/4 cup cold water for blooming
Flavor & Protein Payload
- 1/2 cup unsweetened apple juice
- 1/4 cup orange juice
- 1 scoop unflavored or vanilla whey protein isolate
- 1/4 cup cold water for protein slurry
- 1-2 drops liquid stevia optional
- 1 teaspoon lemon juice optional
Method
- Pour 1/4 cup cold water into a small bowl. Sprinkle the unflavored gelatin powder evenly over the top and let it sit undisturbed for 5 minutes until it blooms into a sponge-like texture.
- In a small saucepan, heat the apple juice and orange juice until hot, but do not let it reach a rolling boil.
- Add the hot juice mixture to the bowl with the bloomed gelatin. Stir gently with a silicone spatula until the gelatin fully dissolves and the liquid is completely clear and smooth.
- In a separate shaker cup or small bowl, mix the whey protein powder with the remaining 1/4 cup of cold water until perfectly smooth.
- Allow the hot gelatin mixture to cool for 2 to 3 minutes. Slowly whisk the cold protein mixture into the warm juice mixture until fully combined.
- Stir in the liquid stevia and lemon juice if using.
- Carefully pour the final mixture into the cavities of a 12-cup muffin tin.
- Refrigerate for 2 to 3 hours, or until the gelatin is fully set and firm.
- Run a warm butter knife around the edges of the muffin tin cavities to release the round gelatin bites. Serve chilled.
