Ingredients

  • 1 cup fat-free cottage cheese
  • 1 vanilla protein shake about 160 calories and 30g protein
  • 1/4 cup zero-calorie sugar alternative adjust to taste if needed
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon vanilla extract
  • salt dash
  • 1/4 cup Cinnamon Toast Crunch cereal for mix-in
  • Cinnamon Toast Crunch cereal additional, for topping if desired

Method

  1. Add the cottage cheese, vanilla protein shake, sweetener, cinnamon, vanilla extract, and salt to a blender.
  2. Blend until completely smooth and no cottage cheese curds remain.
  3. Pour the mixture into a Ninja Creami pint container, staying below the MAX FILL line.
  4. Freeze the pint on a flat, level surface until completely solid.
  5. Place the frozen pint into the Ninja Creami and process using the Lite Ice Cream setting.
  6. If the first spin looks powdery or crumbly, run a Re-Spin. If it is still dry afterward, add 1 to 2 tablespoons of milk and Re-Spin again.
  7. Make a hole down the center of the ice cream and add 1/4 cup Cinnamon Toast Crunch cereal.
  8. Run the Mix-In cycle until the cereal is distributed throughout the ice cream.
  9. Top with additional Cinnamon Toast Crunch if desired and serve immediately.

Notes

Blend completely: Blend the cottage cheese until completely smooth before freezing so there are no curds in the finished ice cream.
Sweetness: Taste the base before freezing and adjust the sweetener if needed. Different protein shakes vary in sweetness.
Re-Spin first: A powdery first spin is common with low-fat high-protein Ninja Creami recipes. Run a Re-Spin before automatically adding extra liquid.
Cereal texture: Add the Cinnamon Toast Crunch during the Mix-In cycle instead of blending it into the base before freezing. Fresh cereal added on top gives the best crunch.
Storage: If you have leftovers, smooth the top of the pint before refreezing. Process again using Lite Ice Cream and Re-Spin as needed, then add fresh cereal after spinning.
Nutrition: Nutrition is approximate and assumes a 160-calorie, 30g-protein vanilla shake, typical fat-free cottage cheese, and 1/4 cup Cinnamon Toast Crunch. Extra cereal used for topping is not included.
