Ingredients
- 150 g Low Fat Cottage Cheese 2/3 cup
- 60 g BakedLean Fit Flour 1/2 cup
- 3 tbsp Mini Chocolate Chips
- 3 tbsp Shredded Unsweetened Coconut
- 3 tbsp Monk Fruit Sweetener Granulated
- 1 tsp Baking Powder
- 1 pinch Sea Salt
Method
- In a medium mixing bowl, combine the cottage cheese, Fit Flour, monk fruit sweetener, baking powder, and salt. Use a silicone spatula to fold the ingredients together until a thick dough forms.
- Gently fold in the shredded coconut and chocolate chips until evenly distributed throughout the dough.
- Preheat your air fryer to 325°F (160°C). Line the basket with a small piece of parchment paper.
- Using a small cookie scoop, portion the dough into 10-12 even rounds. Place them in the air fryer basket.
- Air fry for 10-12 minutes until the edges are golden brown and the centers are set.
- Remove from the air fryer and let cool for at least 5 minutes on a wire rack before serving.

Notes
For the best results, use a Whey/Casein blend like PE Science (code BAKEDLEAN) if you are substituting any flour for protein powder. 100% Whey will result in a rubbery texture.
