  • 1 roll ciabatta roll, split in half (or sourdough bread)
  • 0.5 cup low-calorie pizza sauce approximately 1/4 cup per half
  • 0.25 cup cottage cheese
  • 1 to taste Italian seasoning
  • 1 to taste garlic powder or garlic salt
  • 1 to taste salt and black pepper
  • 1 to taste dried oregano
  • 1 to taste dried basil
  • 1 optional pepperoni or other pizza toppings
  • 1 to taste grated Parmesan cheese for serving

Method
 

  1. Split the ciabatta roll in half and place both pieces cut-side up.
  2. Spread approximately 1/4 cup of pizza sauce over each half. Adjust the amount when using smaller slices of bread.
  3. Divide the cottage cheese between the two pieces.
  4. Season with Italian seasoning, garlic powder or garlic salt, black pepper, oregano, basil, and a small amount of salt if needed.
  5. Cover each piece with pepperoni or other toppings, if using.
  6. Air fry at approximately 375°F for 6–10 minutes, or until the bread is crisp and the cheese is melted and beginning to brown.
  7. Top with grated Parmesan and serve immediately.

Cottage Cheese Pizza Toast Tips & Expert Strategy

BREAD CHOICE: Use a sturdy bread like ciabatta or a thick slice of sourdough. Soft sandwich bread will not hold up to the sauce and cottage cheese and will become soggy.
TEXTURE NOTE: The finished toast should be crispy and crunchy on the bottom with a thick, melted, cheesy top layer. The cottage cheese curds melt down under the mozzarella, so it will not taste or feel like cold cottage cheese.
SUBSTITUTION WARNING: Using a heavy pizza sauce loaded with oil will increase the calories quickly without improving the flavor. Stick to a lighter marinara or pizza sauce around 30 calories per serving.
SERVING TIP: Serve hot right out of the air fryer with an extra dusting of Parmesan cheese and some red pepper flakes if you like a little heat.
