A high-protein, low-calorie twist on the classic Italian dessert. Frozen Greek yogurt balls 'drowned' in hot espresso and topped with sugar-free whipped cream.

Ingredients
  

  • 1 cup Greek yogurt approx 227g
  • 1 tbsp zero sugar white chocolate pudding mix approx 8-10g
  • 1 shot espresso or hot strong coffee
  • 2 tbsp zero sugar whipped cream

  1. Whisk the Greek yogurt and zero sugar pudding mix together in a bowl until completely smooth.
  2. Use a cookie scoop to portion the mixture into balls onto a parchment-lined tray and freeze for 2-3 hours.
  3. Place the frozen balls into a glass and pour hot espresso directly over them.
  4. Finish with zero sugar whipped cream and serve immediately.

Healthy Affogato Tips & Expert Strategy

TEXTURE/MOUTHFEEL: The frozen yogurt should have the consistency of firm soft-serve. It will soften rapidly once the hot coffee is added, creating a creamy latte-like sauce at the bottom of the glass.
STABILIZER WARNING: Do not skip the pudding mix. Without it, the yogurt will freeze into a hard, icy block that won't melt gracefully when the coffee hits it.
THE MELLOWING EFFECT: If your yogurt balls are too tart, let the mixture sit in the fridge for 10 minutes before freezing to allow the pudding mix flavors to fully hydrate and sweeten the dairy.
PROFESSIONAL FINISH: Serve in a chilled glass to slow down the initial melt, and use a dark roast espresso to provide the best flavor contrast to the white chocolate yogurt base.
