Ingredients
Apple Fritter Batter
- 1 cup 120g sugar-free vanilla or yellow cake mix, use dry mix
- 1/2 cup FitFlour
- 1 teaspoon baking powder
- 1 1/2 teaspoons ground cinnamon
- 1/4 teaspoon ground nutmeg
- 1/4 teaspoon salt
- 2 large eggs
- 1/2 cup 120g nonfat Greek yogurt
- 1/4 cup 60ml milk, plus more only as needed
- 1 teaspoon vanilla extract
- 1 tablespoon fresh lemon juice
- 2 medium apples approximately 250g, peeled, cored, and finely diced
- Avocado or canola oil cooking spray
Optional Powdered Sugar Glaze
- 1/2 cup powdered sugar or powdered sugar alternative
- 1-2 teaspoons water
Method
- Peel, core, and finely dice the apples into approximately 1/4-inch pieces. Toss with the lemon juice and set aside.
- Whisk together the dry cake mix, FitFlour, baking powder, cinnamon, nutmeg, and salt in a large mixing bowl.
- In a separate bowl, whisk together the eggs, Greek yogurt, 1/4 cup milk, and vanilla until smooth.
- Add the wet ingredients to the dry ingredients and stir just until combined. Fold in the diced apples. The batter should be thick, sticky, and scoopable; add extra milk one tablespoon at a time only if needed.
- Preheat the air fryer to 325°F. Do not place loose parchment in the empty air fryer.
- Lightly grease air-fryer-safe parchment. Divide the batter into 6 fritters, gently flattening each into an irregular shape. Lightly spray the tops with oil.
- Air fry at 325°F for 5-6 minutes, until the first side has begun to set.
- Carefully flip each fritter, lightly spray the second side, and continue air frying until the total cooking time reaches 10-12 minutes.
- Check the thickest fritter to make sure the center no longer contains wet batter. Let the fritters cool for 3-5 minutes.
- For the optional glaze, whisk the powdered sugar or alternative with 1 teaspoon water. Add more water a few drops at a time until thick but drizzleable, then drizzle over fritters that are no longer piping hot.
