Ingredients

Biscuit Dough
  • 1 cup self-rising flour
  • 1 cup nonfat Greek yogurt
  • 0.5 cup low-fat shredded cheddar cheese
  • 2 teaspoons Old Bay seasoning
  • 1 egg beaten, for optional egg wash

Method

  1. Preheat the oven to 350°F and line a baking sheet with parchment paper.
  2. Add the self-rising flour, nonfat Greek yogurt, shredded cheddar cheese, and Old Bay seasoning to a large bowl.
  3. Mix until a soft dough forms.
  4. For cut biscuits, transfer the dough to a lightly floured surface, gently pat or roll it to about ½-inch thick, and cut with a biscuit cutter. For drop biscuits, divide the dough directly into about 8 mounds on the prepared baking sheet.
  5. If you want more color on top, lightly brush the biscuits with beaten egg.
  6. Bake for 17–19 minutes, or until the tops are lightly golden and the edges are set.
  7. Let cool for a few minutes before serving.

Notes

Healthy Cheddar Bay Biscuits Tips & Expert Strategy

TEXTURE EXPECTATION: These should be soft and savory on the inside with a slight chew, not flaky like a laminated butter biscuit.
DONT OVERMIX: Stir the dough just until the flour disappears. If you knead it too much, the biscuits will become rubbery.
SUBSTITUTION WARNING: Using regular yogurt instead of Greek yogurt will introduce too much water, making the dough too sticky to hold its shape.
SERVING TIP: Warm the biscuit for 10 seconds in the microwave if you are eating them the next day to soften the center back up.
