Ingredients
  

  • 6 large whole eggs hard-boiled
  • 8 large egg whites hard-boiled
  • 3/4 cup nonfat plain Greek yogurt
  • 1 tbsp Dijon mustard
  • 1 tbsp dill pickle relish drained
  • 1 tbsp apple cider vinegar or lemon juice
  • 2 tbsp fresh dill finely chopped
  • 1/4 tsp salt
  • 1/4 tsp black pepper
  • 1/4 tsp smoked paprika optional
  • 1/3 cup finely diced cucumber patted dry
  • 2 tbsp finely chopped red onion

Method
 

  1. Dice the hard-boiled whole eggs and egg whites.

  2. In a large mixing bowl, whisk together Greek yogurt, Dijon mustard, relish, vinegar (or lemon juice), dill, and seasonings.

  3. Add the diced eggs, cucumber (or celery), and red onion to the bowl.

  4. Gently fold everything together until evenly coated.

  5. Serve immediately or chill for better flavor.
