A nostalgic toaster pastry reimagined with 20g of protein. These soft, doughy air-fried treats are filled with sugar-free jam and made with a high-quality whey/casein blend for the perfect texture.

Ingredients
  

The Dough
  • 72 g all-purpose flour
  • 84 g protein powder Whey/Casein blend recommended
  • 20 g cold unsalted butter cut into small pieces
  • 90 g nonfat Greek yogurt
  • 20 g zero-calorie sweetener granulated
  • 0.5 tsp baking powder
  • 0.25 tsp salt
  • 1 tsp vanilla extract
  • 6 tbsp cold water
The Filling
  • 60 g sugar-free jam or preserves
Optional Glaze
  • 20 g powdered zero-calorie sweetener
  • 1-2 tsp water

Method
 

  1. In a medium bowl, whisk together the flour, protein powder, sweetener, baking powder, and salt.
  2. Add the cold butter and work it into the dry ingredients with your fingers or a fork until the mixture looks sandy.
  3. Mix in the Greek yogurt and vanilla extract. Add the cold water and stir until a soft dough forms.
  4. Cover the dough and let it rest for 15 minutes to allow the flour and protein to hydrate.
  5. Roll the dough between two sheets of parchment paper into a rectangle. Cut into 8 rectangles.
  6. Place 15g of jam on 4 of the rectangles. Top with the remaining rectangles and crimp edges with a fork. Poke vent holes in the top.
  7. Air fry at 375°F (190°C) for 5-7 minutes until the tops are set and lightly golden.

WHEY VS CASEIN: This recipe requires a blend (like PE Science). 100% whey will result in a rubbery texture that is difficult to roll and chew.
TEXTURE EXPECTATION: These are softer and breadier than a traditional flaky pie crust. They are meant to be moist and satisfyingly dense to hold the high protein content.
PATCHABLE DOUGH: Because of the yogurt, this dough is very forgiving. If it cracks while rolling, simply pinch it back together with your fingers.
