Ingredients
The Dough
- 72 g all-purpose flour
- 84 g protein powder Whey/Casein blend recommended
- 20 g cold unsalted butter cut into small pieces
- 90 g nonfat Greek yogurt
- 20 g zero-calorie sweetener granulated
- 0.5 tsp baking powder
- 0.25 tsp salt
- 1 tsp vanilla extract
- 6 tbsp cold water
The Filling
- 60 g sugar-free jam or preserves
Optional Glaze
- 20 g powdered zero-calorie sweetener
- 1-2 tsp water
Method
- In a medium bowl, whisk together the flour, protein powder, sweetener, baking powder, and salt.
- Add the cold butter and work it into the dry ingredients with your fingers or a fork until the mixture looks sandy.
- Mix in the Greek yogurt and vanilla extract. Add the cold water and stir until a soft dough forms.
- Cover the dough and let it rest for 15 minutes to allow the flour and protein to hydrate.
- Roll the dough between two sheets of parchment paper into a rectangle. Cut into 8 rectangles.
- Place 15g of jam on 4 of the rectangles. Top with the remaining rectangles and crimp edges with a fork. Poke vent holes in the top.
- Air fry at 375°F (190°C) for 5-7 minutes until the tops are set and lightly golden.
