Ingredients
  

  • 1 cup almond flour 96g
  • 1/4 cup vanilla or plain whey/casein blend protein powder 25g
  • 2 egg whites or 1/4 cup liquid egg whites
  • 3 tbsp erythritol or monk fruit sweetener adjust to taste
  • 1 1/2 tsp Amaretto liqueur
  • 1/2 tsp vanilla extract optional
  • 1 pinch salt

Method
 

  1. Preheat oven to 325°F (160°C) and line a baking sheet with parchment paper.
  2. In a mixing bowl, whisk together the almond flour, protein powder, sweetener, and salt.

  3. In a separate bowl, lightly whisk the egg whites until just frothy—no peaks needed.
  4. Add the egg whites, Amaretto, and vanilla extract (if using) to the dry mixture. Stir until a sticky dough forms.
  5. Scoop into ~12 cookies and bake for 12-15 minutes until edges are golden. Cool completely on tray.
