Ingredients

Baked Oatmeal
  • 1 cup rolled oats
  • 1 large egg
  • 1/2 cup plain nonfat Greek yogurt
  • 2 scoops protein powder
  • 3/4 cup unsweetened applesauce
  • 1/2 cup milk
  • 2 tablespoons brown sugar substitute
  • 1/2 teaspoon vanilla extract
  • 1 teaspoon cinnamon
  • 1/4 teaspoon salt
  • 1/4 teaspoon baking powder
Cinnamon Apple Topping
  • 1 1/2 cups apples diced
  • cinnamon to taste
  • cooking spray as needed

Equipment

Method

  1. Preheat the oven to 350°F and lightly spray an 8×8-inch baking dish.
  2. Add the diced apples to a skillet with cinnamon and cook over medium heat for a few minutes, stirring occasionally, until they begin to soften but still hold their shape.
  3. Add the rolled oats, egg, Greek yogurt, protein powder, applesauce, milk, brown sugar substitute, vanilla, cinnamon, salt, and baking powder to the prepared baking dish.
  4. Stir thoroughly until everything is evenly combined and there are no dry pockets of protein powder.
  5. Spread the partially cooked cinnamon apples evenly over the top without stirring them into the oatmeal.
  6. Bake at 350°F for about 30–35 minutes, or until the center is set but still soft and moist.
  7. Let the baked oatmeal rest for about 10 minutes before slicing.

Notes

Protein powder: This version uses 2 scoops. Protein powders behave differently, so use one you already like for baking.
Brown sugar substitute: Use 2 tablespoons. The nutrition estimate assumes Swerve Brown; another product will change the nutrition and may slightly affect texture.
Apples: Cook the diced apples briefly with cinnamon before spreading them over the oatmeal. They should begin to soften but still hold their shape.
Assembly: Keep the apples on top rather than folding them into the oatmeal.
Oats: This recipe was made with rolled oats. Quick oats and steel-cut oats were not tested.
Texture: Bake until the center is set but do not continue baking until the oatmeal is dry. Let it rest for about 10 minutes before slicing.
Nutrition: Estimated per one-fourth of the pan using representative rolled oats, FAGE 0% Greek yogurt, Nutricost vanilla whey concentrate, Mott’s no-sugar-added applesauce, skim milk, Swerve Brown, and about 1½ cups diced apples. Total carbohydrate includes sugar alcohol from the sweetener. Nutrition varies by brand and portion size.
