  • 2 eggs
  • 1/4 cup honey or sugar-free syrup
  • 1 teaspoon vanilla extract

  • 1 cup self-rising flour
  • 1/2 cup vanilla protein powder
  • 1/2 teaspoon cinnamon

Method
 

  1. Mash the bananas really well in a large bowl until mostly smooth.
  2. Whisk in the eggs, honey or syrup, and vanilla until fully combined and emulsified.
  3. Add the self-rising flour, protein powder, and cinnamon. Mix until just combined. Do not overmix or the crumb can get dense.
  4. Fold in chocolate chips or walnuts if using.
  5. Bake at 350°F (175°C). For muffins: 18–22 minutes. For a loaf: 35–45 minutes. For a small square pan: 25–32 minutes.
  6. Pull the bread or muffins from the oven when the center is set and a toothpick comes out mostly clean.
