Ingredients
  

  • 1.5 cups all-purpose flour
  • 1 cup whole milk cottage cheese Good Culture
  • 1 cup fresh blueberries
  • 1/2 cup coconut sugar
  • 1/4 cup coconut oil melted
  • 2 eggs
  • 1 tsp baking soda

Method
 

  1. Preheat oven to 375F and line muffin tin using every other cavity.

  2. Whisk melted oil, sugar, vanilla, milk, and eggs. Stir in cottage cheese.

  3. Fold in dry ingredients with a spatula until just incorporated.

  4. Toss blueberries in flour and fold into the batter.
  5. Bake for 23-25 minutes until a toothpick comes out clean.
  6. Cool completely before removing from liners.
