Ingredients
- 112 g almond flour 1 cup
- 62 g PEScience Chocolate or Vanilla Protein Powder 2 scoops
- 225 g cottage cheese 1 cup
- 40 g sugar alternative 1/4 cup
- 30 g sugar-free chocolate syrup 2 tbsp
- 20 g cocoa powder 1/4 cup
- 30 g mini chocolate chips for rolling
Method
- Add the cottage cheese to a high-speed blender and process until completely smooth and creamy.
- In a medium bowl, whisk together the almond flour, protein powder, cocoa powder, and sugar alternative.
- Add the blended cottage cheese and chocolate syrup to the bowl. Stir until a thick dough forms.
- Roll the dough into 10 even-sized balls and coat each in mini chocolate chips.
- Refrigerate for at least 30 minutes to allow them to firm up before serving.
