Ingredients
  

Ice Cream Base
  • 300 ml skim milk
  • 1 scoop PE science protein powder Whey/Casein blend preferred
  • 1 cup low fat Good Culture cottage cheese roughly 240g
  • 2 tbsp sugar free sweetener Adjust to taste
Mix-ins
  • 2-4 sugar free Oreos crushed

Method
 

  1. Place the skim milk, protein powder, cottage cheese, and sweetener into a high-speed blender.
  2. Blend until the mixture is completely smooth with no visible curds from the cottage cheese.
  3. Pour the liquid into a Ninja Creami pint container and freeze for a full 24 hours on a level surface.
  4. Process the pint on the 'Light Ice Cream' setting. If crumbly, add a splash of milk and 'Re-spin'.
  5. Add crushed sugar-free Oreos to the center and process using the 'Mix-in' function.

MOUTHFEEL & TEXTURE: This ice cream should feel dense and creamy, similar to a premium gelato. If it feels like shaved ice, you likely need to add a touch more cottage cheese or use a protein powder with more casein.
WHEY VS CASEIN: Swapping a blend for 100% whey will result in a much thinner, icier result. Casein is hydrophobic and absorbs the liquid, creating the 'body' of the ice cream.
