Dry Ingredients
- 1 cup All-purpose flour
- 1 cup Fit Flour (or protein baking flour)
- 0.5 cup Splenda
- 1 tsp Baking soda
- 1 tbsp Cinnamon
- 0.5 tsp Salt
Wet Ingredients
- 3 large Eggs
- 2 cups Grated zucchini Lightly blotted, not squeezed dry
- 1 cup Pumpkin puree Plain, not pie filling
- 1 tsp Vanilla extract
Method
- Preheat your oven to 350°F (175°C). Grease two 8x4-inch loaf pans or line them with parchment paper.
- In a medium bowl, whisk together the all-purpose flour, Fit Flour, Splenda, baking soda, cinnamon, and salt. Set aside.
- In a large bowl, beat the eggs until smooth.
- Add the grated zucchini, pumpkin puree, and vanilla extract to the eggs. Mix until combined.
- Add the dry ingredients to the wet ingredients. Fold together with a silicone spatula until just combined. Do not overmix.
- Add the batter to the prepared loaf pan and smooth the top.
- Bake at 350°F (175°C) for 50 to 60 minutes, or until a toothpick inserted into the center comes out clean. If browning too quickly, loosely cover with foil.
- Let the loaves cool in the pans for 5 minutes, then remove and transfer to a wire rack to cool completely before slicing.
