Ingredients

Sorbet Base
  • 2 cups carrot orange turmeric juice
  • 1-2 tablespoons honey
  • 1 pinch salt
  • 1 squeeze lemon or orange juice optional, for brightness
  • 0.25 teaspoon xanthan gum optional, for smoother texture

Equipment

Ninja Creami Deluxe

Method

  1. Pour the carrot orange turmeric juice directly into an empty Ninja Creami Deluxe pint.
  2. Add the honey, a pinch of salt, and a squeeze of fresh citrus juice if using. If using xanthan gum, sprinkle it across the top now.
  3. Stir the mixture vigorously until all the honey is completely dissolved into the juice.
  4. Place the lid on the pint and set it on a level surface in the freezer. Freeze undisturbed for at least 24 hours.
  5. Remove the frozen pint, lock it into the Ninja Creami outer bowl, and process on the 'Sorbet' setting.
  6. If the texture is powdery or crumbly after the first spin, add 1 to 2 tablespoons of extra juice and run the 'Respin' cycle until smooth. Serve immediately.

Immune Refresher Sorbet Tips & Expert Strategy

TEXTURE/MOUTHFEEL: This dessert is designed to mimic a high-end Italian fruit sorbet. It will be slightly icy but incredibly smooth and velvety, melting cleanly on the palate without leaving a heavy film behind.
SWEETNESS ADJUSTMENT: Freezing mutes sweetness and enhances bitterness. When you taste the liquid base before freezing, it must taste slightly too sweet. If it tastes perfectly balanced at room temperature, it will taste bland and overly earthy once frozen.
THE RESPIN RULE: Fruit juices without heavy dairy fat almost always require a respin. Do not assume you did something wrong if the first spin looks like dry sand. A tiny splash of liquid and a respin will immediately force the ice crystals to bind.
PROFESSIONAL FINISHING TOUCH: Serve scoops of this sorbet in chilled glass bowls to slow the melting process. A tiny pinch of flaky finishing salt right on top of the scoop contrasts perfectly with the honey and citrus.
