Ingredients
  

The Dough
  • 150 g plain cottage cheese about 1 container
  • 1/2 small lemon seeded, thin-skinned
  • 60 g Fit Flour high-protein flour alternative
  • 2 tbsp monk fruit sweetener
  • 1/2 cup fresh blueberries
  • 1 pinch sea salt
The Finish
  • 1 tsp powdered sweetener
  • 1/2 tsp fresh lemon zest

Method
 

  1. Preheat your air fryer to 325°F (160°C).
  2. In a blender, combine the cottage cheese and lemon. Blend until completely smooth with no yellow flecks.
  3. Transfer the base to a bowl and stir in Fit Flour, sweetener, and salt. Gently fold in fresh blueberries.
  4. Divide into 12 balls. Air fry at 325°F for 10 minutes, flipping at the 8-minute mark for an even crisp.
  5. While hot, toss in powdered sweetener and extra lemon zest.

Notes

Why 325°F matters: Lowering the heat to 325°F helps cottage-cheese-based doughs cook through before the outside over-browns.
Lemon note: Seed the lemon completely. Seeds are the #1 cause of bitterness when blending whole citrus.
Dough feel: If your dough won’t hold a ball, add 1 teaspoon water at a time. If it feels wet, add 1 teaspoon Fit Flour at a time.
Finish timing: Toss in powdered sweetener while hot so it adheres.
