Ingredients

  • 2 large White or Golden Potatoes Skin on, chopped
  • 4 tbsp Flour
  • 1 pinch Sea Salt To taste
  • 1 pinch Black Pepper To taste
  • 1 splash Water For steaming

Method

  1. Chop the potatoes into cubes, leaving the skin on. Place them in a bowl with a splash of water.
  2. Microwave the potatoes for 3-4 minutes per potato until they are completely tender and easily pierced with a fork.
  3. Drain any remaining water. Mash the hot potatoes in the bowl and add the salt and pepper.
  4. Add the flour and mix thoroughly with a spatula until a cohesive dough forms.
  5. Fill a preheated, greased waffle iron with the dough. Cook for about 9 minutes until the exterior is deeply crisp and holds its structure.
  6. Remove carefully and serve immediately with your favorite toppings.

Notes

Tip: Resist the urge to open the waffle maker too early. The potato dough needs the full time to develop a crust so it doesn't stick.
