Ingredients
- 2 large White or Golden Potatoes Skin on, chopped
- 4 tbsp Flour
- 1 pinch Sea Salt To taste
- 1 pinch Black Pepper To taste
- 1 splash Water For steaming
Method
- Chop the potatoes into cubes, leaving the skin on. Place them in a bowl with a splash of water.
- Microwave the potatoes for 3-4 minutes per potato until they are completely tender and easily pierced with a fork.
- Drain any remaining water. Mash the hot potatoes in the bowl and add the salt and pepper.
- Add the flour and mix thoroughly with a spatula until a cohesive dough forms.
- Fill a preheated, greased waffle iron with the dough. Cook for about 9 minutes until the exterior is deeply crisp and holds its structure.
- Remove carefully and serve immediately with your favorite toppings.

Tip: Resist the urge to open the waffle maker too early. The potato dough needs the full time to develop a crust so it doesn't stick.
