Ingredients
  

  • 3 tbsp butter Salted or unsalted
  • 10 oz mini marshmallows Standard bag size
  • 3 scoops vanilla protein powder Whey/Casein blend recommended (approx 90g total)
  • 2 tbsp milk Whole milk preferred for hydration
  • 1 tsp vanilla extract
  • 4 cups Fruity Pebbles cereal Approx 140g

Method
 

  1. Melt the butter in a large pot over low heat until fully liquid.
  2. Add the mini marshmallows and stir continuously until they are 90% melted. Do not allow the mixture to boil.
  3. Keep heat on low. Whisk in the protein powder, vanilla extract, and milk until a smooth, thick frosting-like cream forms.
  4. Remove from heat immediately. Gently fold in the Fruity Pebbles cereal until every flake is evenly coated.
  5. Transfer to a greased baking pan. Press down gently with a buttered spatula—do not compress the bars tightly.
  6. Let set at room temperature for 30 minutes before slicing into 8 portions.

TEXTURE/MOUTHFEEL DISCLAIMER: These bars are engineered to be tender and gooey. If they feel extremely dense or hard, it means you either packed them too tightly into the pan or you overheated the marshmallows during the melting phase.
INGREDIENT SUBSTITUTION WARNING: Swapping the whey/casein blend for 100% whey isolate will fundamentally change the chemistry. Isolate dries out rapidly when mixed with sugar, leaving you with a rubbery, unpleasant texture. Use a blend for best results.
THE BETTER LATER RULE: While delicious immediately, the texture normalizes and becomes much better after resting at room temperature for an hour. This allows the milk and protein to fully hydrate within the marshmallow matrix.
PROFESSIONAL FINISHING TOUCH: To ensure you get perfectly square, bakery-style cuts without tearing the cereal, lightly spray your knife blade with nonstick cooking spray before slicing.
