Pumpkin Corn Flake Protein Breakfast Cookies

These soft Pumpkin Protein Breakfast Cookies are made with pumpkin, almond flour, vanilla protein powder, and crunchy corn flakes. The recipe makes four large breakfast cookies with approximately 20 grams of protein each before optional chocolate chips or glaze.

Ingredients
  

  • 1/2 cup pumpkin purée not pumpkin pie filling
  • 1 large egg
  • 2 scoops vanilla protein powder
  • 1 cup almond flour
  • 1 cup corn flakes lightly crushed
  • corn flakes additional, for topping
  • 2-4 tablespoons zero-calorie sweetener to taste
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1 teaspoon vanilla extract
  • 1 teaspoon cinnamon or pumpkin pie spice optional
  • 1/3 cup chocolate chips optional
Optional Simple Glaze
  • powdered sugar as needed
  • water as needed

Method
 

  1. Preheat the oven to 350°F and line a baking sheet with parchment paper.
  2. Mix the pumpkin purée, egg, vanilla extract, and sweetener until evenly combined.
  3. Stir in the protein powder, almond flour, baking powder, salt, and optional cinnamon or pumpkin pie spice until a thick dough forms.
  4. Lightly crush the corn flakes and fold them into the dough. Fold in the chocolate chips if using.
  5. Let the dough rest for 5 minutes.
  6. Divide the dough into 4 large cookies and flatten each one to the desired thickness because the cookies will not spread much while baking.
  7. Sprinkle additional corn flakes over the tops and gently press them into the cookie dough.
  8. Bake at 350°F for 13–14 minutes, until the tops are set.
  9. Let the cookies cool for at least 10 minutes so they can firm up.
  10. For the optional glaze, mix powdered sugar with a small amount of water until thick and drizzle over completely cooled cookies.

Notes

Texture: These cookies are intentionally soft and cake-like rather than chewy because pumpkin adds a significant amount of moisture.
Shaping: Flatten the cookies before baking because they will not spread very much in the oven.
Corn flakes: Lightly crush the cereal rather than pulverizing it. Reserve extra corn flakes to press into the tops for additional texture.
Baking: Avoid overbaking. The cookies should still be soft when they come out of the oven and will firm as they cool.
