Ingredients
  

  • 1 large Low carb mission burrito size wrap
  • 3 pieces Low fat mozzarella sticks
  • 2 whole Eggs
  • 2 tbsp Diced tomatoes
  • 2 tbsp Shredded Italian cheese
  • 1 pinch Fresh basil
  • 1 tsp Italian seasonings (garlic, pepper, salt, herbs)

Method
 

  1. Place the low carb burrito wrap flat on a clean surface and arrange the 3 low fat mozzarella sticks along the edges to create a triangle shape.
  2. Fold the tortilla edges tightly over the mozzarella cheese sticks and pin them down securely using toothpicks.
  3. Carefully transfer the secured tortilla base into your air fryer basket, then crack the 2 whole eggs directly into the center of the triangle.
  4. Top the eggs with the diced tomatoes, shredded Italian cheese, and fresh basil. Brush the outer wrap edges with egg wash and season everything with the Italian seasoning blend.
  5. Air fry at 350°F (175°C) for 6 to 8 minutes until the eggs are cooked to your preferred level of doneness and the wrap is golden brown.
