Ingredients
- 1 large Low carb mission burrito size wrap
- 3 pieces Low fat mozzarella sticks
- 2 whole Eggs
- 2 tbsp Diced tomatoes
- 2 tbsp Shredded Italian cheese
- 1 pinch Fresh basil
- 1 tsp Italian seasonings (garlic, pepper, salt, herbs)

- Place the low carb burrito wrap flat on a clean surface and arrange the 3 low fat mozzarella sticks along the edges to create a triangle shape.
- Fold the tortilla edges tightly over the mozzarella cheese sticks and pin them down securely using toothpicks.
- Carefully transfer the secured tortilla base into your air fryer basket, then crack the 2 whole eggs directly into the center of the triangle.
- Top the eggs with the diced tomatoes, shredded Italian cheese, and fresh basil. Brush the outer wrap edges with egg wash and season everything with the Italian seasoning blend.
- Air fry at 350°F (175°C) for 6 to 8 minutes until the eggs are cooked to your preferred level of doneness and the wrap is golden brown.
