Ingredients
  

Waffle Batter
  • 140 g FitFlour
  • 1.5 cup Splenda Or preferred granulated sweetener
  • 120 g Fresh Strawberries
  • 1 whole Lemon Peeled, white pith removed, seeds removed
  • 3 large Eggs
  • 1.5 tsp Baking Powder
  • 0.5 tsp Baking Soda
  • 0.25 tsp Salt

Method
 

  1. Preheat your waffle iron to a medium-high setting and grease with non-stick spray.
  2. Peel the lemon and remove seeds. In a high-powered blender, add the lemon segments, strawberries, and eggs. Blend until perfectly smooth.
  3. Add the FitFlour, Splenda, salt, baking powder, and baking soda. Pulse until just incorporated.
  4. Pour batter into the center of the waffle iron and spread toward the edges. Close the lid.
  5. Cook for 4-6 minutes, or until the steam stops and the waffles are crisp.

Notes
