Ingredients
Waffle Batter
- 140 g FitFlour
- 1.5 cup Splenda Or preferred granulated sweetener
- 120 g Fresh Strawberries
- 1 whole Lemon Peeled, white pith removed, seeds removed
- 3 large Eggs
- 1.5 tsp Baking Powder
- 0.5 tsp Baking Soda
- 0.25 tsp Salt
Method
- Preheat your waffle iron to a medium-high setting and grease with non-stick spray.
- Peel the lemon and remove seeds. In a high-powered blender, add the lemon segments, strawberries, and eggs. Blend until perfectly smooth.
- Add the FitFlour, Splenda, salt, baking powder, and baking soda. Pulse until just incorporated.
- Pour batter into the center of the waffle iron and spread toward the edges. Close the lid.
- Cook for 4-6 minutes, or until the steam stops and the waffles are crisp.
