Setting Time 3 hours
Total Time 3 hours 20 minutes

Ingredients

Yogurt Protein Coating
  • 1 cup vanilla fat-free, sugar-free yogurt keep refrigerated
  • 1/2 cup vanilla protein powder absorption varies by brand
  • 1/2 cup powdered sugar
Pretzels and Topping
  • mini pretzel twists as needed for dipping
  • freeze-dried strawberries crushed, for topping

Equipment

Method

  1. Line a baking sheet or large tray with parchment paper.
  2. Stir the vanilla yogurt, vanilla protein powder, and powdered sugar together until completely smooth, scraping the bottom of the bowl so no dry pockets remain.
  3. Dip each pretzel into the yogurt mixture. Let the excess drip back into the bowl, then arrange the coated pretzel on the prepared tray.
  4. Immediately sprinkle each pretzel with crushed freeze-dried strawberries while the coating is still wet.
  5. Choose a setting method. For the experimental method used on the test batch, preheat the oven to 250°F, turn it completely off, and place the tray inside for 3 hours. This method has not been validated for final water activity or shelf stability; use it at your own risk. For the freezer option, freeze the tray until the coating is firm, about 1 to 2 hours.
  6. Keep the finished pretzels refrigerated or frozen unless a finished batch has been tested and shown to have a shelf-stable water activity. Let frozen pretzels soften briefly before eating.

Notes

Experimental turned-off-oven method: Preheat the oven to 250°F, turn it completely off, and place the tray inside for 3 hours. This records the method used for the test batch. It has not been validated for final water activity or shelf stability; use it at your own risk.
Freezer option: Freeze the dipped pretzels until firm, about 1 to 2 hours, then transfer them to a covered freezer-safe container. Let them soften briefly before eating.
Storage: Keep finished pretzels refrigerated or frozen unless a finished batch has been tested and shown to have a shelf-stable water activity.
Protein powder: Absorption varies by brand, so the coating may be slightly thicker or thinner.
Yield and nutrition: The exact yield depends on the pretzel size and how heavily each one is coated. Nutrition is not provided until the pretzel quantity, tested brands, and final yield are confirmed.
