Classic vintage no-bake snowflake cookies made with a fudgy chocolate cream cheese base, oats, mini marshmallows, pecans, and rolled in shredded coconut.

Ingredients
  

Cookie Base
  • 3 ounces cream cheese softened
  • 2 tablespoons milk
  • 1/2 teaspoon vanilla
  • 2 cups confectioners’ sugar sifted
  • 2 ounces unsweetened chocolate melted and cooled
  • 1 cup oats quick or old-fashioned, uncooked
  • 1 cup miniature marshmallows
  • 1/2 cup chopped pecans
  • 3/4 cup flaked or shredded coconut

Method
 

  1. Beat the cream cheese, milk, and vanilla together until creamy and smooth.
  2. Gradually add the confectioners’ sugar, beating until well blended.
  3. Beat in the melted and cooled chocolate.
  4. Stir in the oats.
  5. Add the miniature marshmallows and chopped pecans and stir until evenly combined.
  6. Divide the mixture in half and shape into two 7-inch logs.
  7. Roll each log in coconut until evenly coated.
  8. Wrap the logs in wax paper and refrigerate for several hours or overnight.
  9. Slice approximately ¼-inch thick and serve cold.

TEXTURE NOTE: These sliced log cookies are dense, rich, and fudgy with soft marshmallow pockets and crunchy pecans.
COOL THE CHOCOLATE: Make sure melted unsweetened chocolate cools to room temperature before adding marshmallows, otherwise they will melt into the batter.
