These zero sugar gummy protein bars are made with hot water, beef gelatin, and a zero sugar drink packet for a simple high-protein gummy snack.

Ingredients
  

Base Mixture
  • 2 cups Hot water
  • 1 packet Zero sugar drink mix Any flavor
  • 4.5 tbsp Beef gelatin Unflavored

Method
 

  1. Add 2 cups of water to a microwave-safe glass measuring cup and microwave until hot.
  2. Whisk in 1 zero sugar drink packet until fully dissolved.
  3. Slowly sprinkle in 4 tablespoons of beef gelatin, whisking constantly to prevent clumps.
  4. Keep whisking until the gelatin is completely dissolved and the mixture is smooth.
  5. Place a silicone mold on a baking tray, then carefully pour the mixture into the mold cavities.
  6. Transfer to the fridge and chill for 2 to 3 hours until completely firm.
  7. Pop the bars out of the molds and store in an airtight container in the fridge.

Zero Sugar Gummy Protein Bars Tips & Expert Strategy

TEXTURE EXPECTATION: These will set up firm and chewy, much denser than standard gelatin desserts. They should hold their shape easily when picked up.
SUBSTITUTION WARNING: You absolutely cannot swap the beef gelatin for collagen peptides. Collagen will not set the liquid, and you will just have flavored water.
STORAGE TIP: Keep these stored in the fridge. Because they are gelatin-based, leaving them out in a warm kitchen will cause them to soften and lose their chew.
MIXING TRICK: If your gelatin clumps despite whisking, you can pass the hot liquid through a fine mesh strainer before pouring it into the molds to ensure a completely smooth bar.
