A massive, 100g protein smoothie bowl that tastes just like blueberry cobbler. It uses a thick base of frozen blueberries and Greek yogurt, topped with crunchy granola and cinnamon for a quick, no-bake breakfast.

Ingredients
  

Smoothie Base
  • 1 cup frozen blueberries
  • 1 cup skim milk
  • 1 cup fat-free Greek yogurt
  • 2 scoops vanilla protein powder Whey/casein blend recommended
  • 2 tablespoons chia seeds
  • 1 teaspoon vanilla extract
  • 1 packet zero-calorie sweetener to taste
  • 1 dash salt
Toppings
  • 0.5 cup fresh blueberries
  • 0.5 cup vanilla protein granola
  • 2 tablespoons sliced almonds or pecans
  • 1 teaspoon ground cinnamon
  • 1 sprig fresh mint for garnish

Method
 

  1. Add the frozen blueberries, skim milk, Greek yogurt, protein powder, chia seeds, vanilla, sweetener, and salt to a blender.
  2. Blend until thick and completely smooth. If needed, stop and scrape down the sides rather than adding extra milk right away so the bowl stays thick.
  3. Pour into one large bowl.
  4. Top with the fresh blueberries, protein granola, sliced almonds or pecans, and cinnamon.
  5. Garnish with fresh mint and serve immediately.

TEXTURE NOTE: The base of this bowl should spin thick and creamy, almost like soft serve ice cream. It should not be a thin, drinkable liquid.
SUBSTITUTION WARNING: If you use fresh blueberries instead of frozen, your bowl will end up watery and will not hold the toppings well.
WHEY VS CASEIN: Using a 100% whey protein can result in a chalky or overly thin texture when blended. A blend works best here for a creamy base.
SERVING TIP: Serve this immediately while it is still icy cold and the granola is crunchy.
